About Game Valley Knives
Game Valley Knives make hand-crafted knives in beautiful Nelson, New Zealand, specialising in knives for outdoor adventurers and chefs. Bespoke blades and handles are designed by an experienced outdoorsman and they are crafted with care and attention to detail in a small workshop in Stoke. The owner and knifemaker is Michael Eddy.
Michael’s Story
Michael has been a keen hunter, fisherman, tramper, and camper since the 1980’s. Many years later, when he read a men’s magazine that featured knife making he decided to make heirloom knives for his kids the old-fashioned way, and his kids really liked them (photos below). This encouraged him to continue making knives.
While Michael was researching steel for the heirloom knives, he thought back to his old hunting knife and realised why it had performed so well—despite its slippery handle—it was made from carbon stell. After choosing linen and canvas Micarta for the new handles, he quickly saw how practical and grippy the material was, especially when wet. That sparked an epiphany: he had to create the ultimate hunting knife—one with a high-performance, high-carbon steel blade and a practical, non-slip handle.
The next step was to consult friends who were serious hunters and to speak with his Uncle, who had sharpened knives professionally. Those conversations led to the creation of the Bird & Trout Knife, the Wedding Cake Knife, and the Bushman Knife.
In 2022, after leaving the corporate world behind, Michael decided to pursue knife making full-time and he began selling his knives to the public. Exhibiting at the Nelson Market gave him valuable feedback and it inspired him to design and sell kitchen knives. Since then, he has crafted a range of custom blades—including carving knives, boning knives, skinning knives, filleting knives, pig sticking knives, and even a Viking knife. And there are many more to come.
One thing remains constant: Michael loves making knives.
